If you don’t want to use eggs when baking, there are several alternatives. For example, chia seeds, applesauce, or banana.

That's thinking outside the shell! Lovely food photography shot, great lighting and ambience. Also, I've used a heaping tablespoon of soy flour to replace eggs in baking.
